Vineyard Information: vulcanic-sandy soil, 380 m. above sea level close to Capodimonte, Bolsena lake.
Vineyard age: 20 years
Yeald: 50 q/Ha
Treatments: in the vineyard only copper and sulfur in if needed.
Vinification: after crushing-destemming, the must ferments spontaneously without temperature control in cement vats, with its own natural yeasts and without the aid of other oenological products. No clarifications / filtrations are made and sulfur dioxide is added during bottling
Skin Contact: 8 days
Ageing: Cement and steel for 6 months, then minimum 3 months in bottle
Total sulfur dioxide (SO2): 12 mg/L
Alcohol: 13% vol.
